American white sturgeon caviar, sustainably farmed by aquaculture in Northern California and optimally selected for size, firmness, color, and taste. ROE caviar is salted for one month to ensure freshness while simultaneously enhancing its flavor. The result is a caviar that is exceptionally fresh with buttery, briny, and nutty undertones. Free of preservatives and borax, which are typical for European caviars.

ROE caviar has been demystifying the caviar experience since its 2015 debut while supporting its core ethos to make caviar fun, modern, and accessible to all.
