Produced by a small ranch in Redding, CA who mainly export to Japan, this supreme grade wagyu filet mignon is marbled to perfection. Enjoyed for its small portion, this is the most tender of all steaks and generally yields less fat than other cuts. We have dry-aged these cuts for minimum four weeks for optimal tenderness.
