Our smoked salmon comes from Cambridge House in Santa Barbara. Founded in 1947, the smokehouse has a cult following thanks to it’s traditional practice of wood-burning open fire smoking, one of the only places still practicing this in the US. Their Atlantic salmon is cured with a 60 year recipe or salt and fresh herbs, then smoked in small batches with local wood from the Sant Ynez valley. Finally, the salmon is sliced paper thin and all dark meat is removed. It truly is the best smoked salmon we have tried.
